This post is the second of a two-part series about my cooking lesson with personal chef Zan Dial. In the previous post, I made egg rolls and shared the recipe with you. In this post, I’ll share Zan’s Pho recipe. 

Pho is a Vietnamese soup that contains spaghetti-like noodles and meat. It’s typically served with a plate of bean sprouts and cilantro as garnishes. My favorite place to get pho in DC is Froggy Bottom Pub, a hot spot on campus for GW students. The pho I made with Zan is much different than Froggy’s pho. The main reason may be because pho is traditionally seasoned with anise, a spice that tastes similar to licorice, and Froggy’s broth tastes like it’s missing this ingredient. Either way, I recommend both phos! Here is Zan’s recipe.

Star anise

15 Minute Pho

Prep Time: 5 minutes

Cook Time: 10 minutes

Makes 4 servings

Ingredients:

  • 5 C. low sodium chicken broth
  • 2 tsp. minced garlic
  • 2 tsp. minced ginger
  • 4 green onions, julienned
  • 2 carrots, julienned
  • 1/4 lb. bean sprouts
  • 12 oz. soba noodles
  • 1 handful of cilantro chopped
  • Star anise
  • Soy sauce to taste

Creating the pho broth

1. In a medium stock pot over medium high heat bring the chicken broth, garlic, bean sprouts, star anise, carrots, and ginger to a boil.

2. Add dried soba noodles. Allow it to boil for 6 minutes before adding the onions. Remove the star anise and serve. Typically, pho is served with a plate of cilantro, bean sprouts and other garnishes. Feel free to add these to your soup. We also included julienned carrots and cabbage. Pho is a very plain soup, so adding these vegetables will give it more flavor.

Tips:

  • Star anise is very expensive. You can use anise seeds instead.
  • Add diced, sautéed chicken for a heartier version of the pho.
  • For a vegetarian version of the dish, use vegetable stock and garnish with tofu and sliced shiitake mushrooms.
  • Zan also recommends using a beef broth or rice noodles instead of the chicken broth and soba noodles.
