This is the easiest breakfast recipe EVER. It’s perfect for college students to make in their dorm kitchens. The recipe is simple, quick, healthy, gluten free and easy to customize. It’s so easy you’ll probably start having it for dinner too.

2-Ingredient, Gluten Free Pancake Recipe

LEVEL: Easy Peasy

PREP TIME: 2 minutes

COOK TIME: 5 minutes

MAKES 1 serving

Ingredients:

1 banana

2 eggs

Instructions:

1. Whisk the eggs in a bowl.

2. Slice the banana and place it in another bowl. Mash the banana using a fork. I recommend using the side of the bowl to hold the banana slices in place while you mash them. It also helps to use an overripe banana.

3. Combine the eggs and the banana mash and whisk until the two are combined well. 

4. Grease a frying pan and bring it to medium heat. Pour a little bit of the batter onto the frying pan. You can make lots of smaller pancakes, or fewer large ones (hopefully yours will turn out prettier than mine), the choice is yours. I find it helpful to pour my batter into a measuring cup because they have those handy spout edges.

5. Check the bottom often and flip the pancakes when the bottoms are golden brown. Like a regular pancake, the second side will take less time to cook than the first side.

TIPS:
  • Unlike regular pancakes, these pancakes are very moist and don’t require maple syrup, so you’re saving yourself from extra sugar and calories.
  • I like mixing cinnamon into the batter for extra flavor.
  • You can also add oats in to the mix to make the pancakes heartier. Let the batter sit for a little so the oats soak in the moisture and get soggy.
  • Top the pancakes like you would regular pancakes with chocolate chips and blueberries. Just drop chocolate chips or fruit onto the pancakes while they’re cooking (step 4) before you flip them over.
