Chocolate Chip Banana Bread Pudding Recipe

I’m home for spring break which means I actually have some time to make my own food!

The last time I hung out with my friend Annie we baked chocolate chip banana bread. We decided to try something similar because this turned out so well, so we found this simple recipe for Chocolate Chip Banana Bread Pudding from All Recipes.

Ingredients

  • 4 eggs
  • 2 cups milk
  • 1 cup sugar
  • 1 tbsp. vanilla extract
  • 4 cups several-day-old French bread
  • 2 well-ripened bananas
  • 1-1/4 cup chocolate chips
  • Cinnamon to taste

Instructions

1. Cut the loaf of bread into cubes. We initially wanted to cut the crusts off the loaf, but then we realized it would have taken way too long. In the end, the crusts gave the bread pudding a nice, firmer texture.

2. Beat the eggs in a large bowl. Add the milk, sugar, vanilla, and cinnamon and mix until smooth.

3. In a separate bowl, mash the bananas with a fork.

4. Add the bananas, chocolate chips, and bread to the large bowl.

5. Let the mixture rest for 5+ minutes so that the bread soaks up the liquid.

6. While the bread is soaking, grease a 9″x5″ loaf pan and heat the oven to 350F.

7. Once the oven has reached 350F, pour the batter into the loaf.

8. Bake for 1 hour, or until a knife inserted into the center comes out clean.

PRO TIP: Scoop out with a spoon, serve warm, and top with ice cream and a sprinkle of cinnamon.
