Pesto sauce may seem fancy, but I discovered that it is super easy to make. After mastering this recipe, you’ll never want to buy it in a jar again.

A few weeks ago I found myself with a bunch of basil leaves. GW’s landscapers were replacing the current plants on campus with new ones and were giving away the basil they had grown. I looked for ways to preserve basil, but it seemed like the best option was to use the leaves at their freshest to create pesto sauce.

The recipe I’m sharing with you was adapted from the Food Network, to make it easier to prepare in a dorm room, or a kitchen without a food processor. It’s super easy to make and the results are very rewarding!

Prep Time: 5 minutes

Makes 1/2 cup


Ingredients:

  • 1 cup packed fresh basil leaves
  • 1 Clove garlic, diced
  • 1/8 cup cashews (Pesto traditionally calls for pine nuts, but these are more expensive and harder to find. Cashews work just as well and there is no difference in taste)
  • 1/3 cup olive oil
  • Salt and pepper to taste

Step 2: Transfer the ingredients into a food processor or blender.

Step 3: Blend the ingredients. If you are using a blender, you’re going to have to use a wooden spoon to push the ingredients down every few seconds after blending. This really isn’t as tricky as it sounds; get creative and you will have amazingly fresh, homemade pesto sauce in a matter of seconds!

  1. In a food processor: Place all of the ingredients in a food processor and blend until smooth.
  2. In a blender: If you don't have a food processor, a blender will work just as well. Place all of the ingredients in the blender. Because blenders are tall and the ingredients don't take up much space, you will need to use something (like a wooden spoon or mallet) to press down the ingredients while they blend. This really isn't as tricky as it sounds; get creative and you will have amazingly fresh, homemade pesto sauce in a matter of seconds!
