Memorial Day is a few days away, which means that the unofficial start to summer is just around the corner! To me, summer means doing everything outside: blogging, exercising, reading, and eating. 

There’s nothing better than enjoying a barbecue or picnic with friends and family on a beautiful summer’s day. That’s why I’ve partnered with my friends at Ketchung! sauces to bring you the perfect recipe for a summer cookout: tangy and sweet Ketchung! Kabobs.

In a world of craft mustards and mayos, Ketchung! founders Helen and David noticed how little variety there was when it came to ketchup. Helen Chung wanted to fill this void so she started playing around in the kitchen (and with words) and Ketchung! was born.

Ketchung! produces two sauces: their signature spicy ketchup and a barbecue sauce. When I tried Ketchung!’s sauces, I knew they had potential to be a lot more than a hot dog topping. My simple yet delicious Ketchung! Kabobs recipe uses Ketchung!’s barbecue sauce as a marinade.

I like to treat my readers well and keep things as simple as possible for you, so I have quite a bit of good news for all of you:

• You will see me preparing the Ketchung! Kabobs on a grill, but don’t worry if you don’t have one at your disposal — a skillet or George Forman grill will also get the job done. (If I’m being completely honest here, this was my first time using a grill, so ask for assistance if you need it to avoid injuries!)

And now without further ado, here is my recipe for Ketchung! Kabobs, the perfect recipe for summer BBQs.


Ketchung! Kabobs Recipe

Ingredients:

• One package of chicken breast (about 1.5 lb.)

• 3 bell peppers

• 1 can of pineapple slices (or pre-cut pineapple chunks, or if you really want to complicate things, buy a whole, fresh pineapple and cut it up yourself)

• 1 bottle of Ketchung! Barbecue Sauce (use code “RAMEN” for 15% off)

• Skewers

Instructions:

MARINATING THE CHICKEN

Marinate the chicken the night before you plan to grill the kabobs. If you’re a procrastinator and forget to do this step until the day you need the kabobs, it’s not the end of the world. The kabobs will still be tasty, but the chicken won’t have absorbed as much of the barbecue sauce.

1. Cut the chicken breasts into chunks (1- or 2-inch pieces), then puncture the chicken several times with a fork or knife (this will help the meat absorb the sauce). 

2. Transfer the chicken into a large zip-top plastic bag. Pour 2/3 of the bottle of Ketchung! Barbecue Sauce into the bag. Seal the bag. Massage the barbecue sauce into the chicken until all of the chicken pieces are covered in Ketchung! Barbecue Sauce. 

3. Place in the fridge and let marinate overnight.

GRILLING THE KABOBS

(Time lapse 12 hours) If you planned ahead and marinated your chicken, congratulations, you may now take your chicken out of the fridge. If you forgot, I’ll give you few minutes to catch up… Once your chicken is ready, you can assemble your kabobs!

4. If you’re using bamboo or wooden skewers for your kabobs, soak them in water for half an hour before you grill. This will prevent the skewers from catching fire. I recommend soaking them in a tall vase or shallow baking dish. 

5. In the meantime, chop the bell peppers into squares, similar in size to the pieces of chicken. If they aren’t already sized accordingly, cut down your pineapple chunks to the same size as the chicken and peppers.

6. Now it’s time for the fun part: assembling the kabobs. Alternate between putting the chicken, peppers, and pineapple onto the skewers. Keep the ends of the skewers free to handle the kabobs more easily.

7. Heat up your grill (or your Lean Mean Fat Reducing Grilling Machine or skillet). While you wait for the temperature to rise, lightly brush some cooking oil onto the kabobs. This will prevent the meat from sticking to the grill. 

8. When the grill is hot enough, carefully place each kabob onto it. In order to avoid burning yourself if the oil drips into the grill and turns into flame, place the kabobs onto the grill from back to front. Turn the kabobs every few minutes to evenly cook the meat. Grill until chicken in the center of each kabob is fully cooked (about 15 minutes).

11. Serve with a side of Ketchung! Barbecue Sauce as a dip.
